Ingredients
- 2½ kg chicken breast
- ½ cup salt (1 tablespoon per cup water)
- ½ cup raw sugar (1 tablespoon per cup water)
- lemon juice
Brine overnight, take out of fridge just before putting on smoker.
Pat dry, spray with olive oil and rub.
Start spritzing after 45 minutes with equal parts maple syrup and water.
Rub
3 tablespoons each:
- black pepper
- paprika
- garlic powder
- thyme
