
Celery Soup

Ingredients
- 2 tbsp olive oil
- 300 gr celery
- sliced
- 1 garlic clove
- peeled
- 200 gr potatoes
- peeled and cut in chunks
- 500 ml vegetable stock
- 100 ml milk
- salt
Step 1
- heat oil in saucepan
- add celery, garlic, potatoes, coat in oil
- add splash of water and salt
- cook and stir for 15 minutes
Step 2
- Pour in vegetable stock and bring to boil
- Turn down heat and simmer for 20 minutes
- Puree the soup in blender
- Pour in the milk and blitz again.
- Season to taste
